Dear Readers,

Spring is here!  Even though one day it gets up into the low 60s and the next it is back in the low 40s, the flowers are blooming in Central Park.  I remember back in May of 2000 when NYC was hit by a giant snow storm. Snow in May!  Fingers crossed that this year it will be a straight shot to warm weather.  

I’ve just turned in my new book which was a joy to write. It is scheduled to come out in 2010.  To celebrate, for the next week or so I plan to bake and read and watch movies.  I literally have two stacks of books sitting here of all the things I have been waiting to read.  As to the baking, I'm starting with an old standard.  My f avorite oatmeal cookies.  It's a simple recipe that is a variation of one from the Joy of Cooking.  If you like soft and chewy cookies, give this a try.

1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup butter
1 egg
1 tsp vanilla
1 tbsp milk
1 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1 cup instant oats
  1. Most people like to add raisins, pecans, chocolate chips, I've even seen coconut.  But for this version leave out the extras and MELT the butter (not just soften) then mix with the sugars.
  2. Next, add egg, vanilla and milk and beat well.
  3. Sift together the dry ingredients, and then mix with the buttery mixture.
  4. Stir in oats, though make sure you don't dry it out.  The dough is tacky to touch when it's ready. 
  5. Use a teaspoon to drop dollops on a greased cookie sheet two inches apart.  (They cookies spread a lot.)
  6. Bake at 350 degrees for approximately 6-10 minutes.  The time varies depending on how much warmth is left in your melted butter.  The cookies get a little bit puffy, and it is just as the puff starts to fall that you want to take them out.
